I just love shrimp scampi, and when I discovered that chicken works just as great, I thought I was in heaven. You can double, triple or whatever this recipe to make it work for your family, or for your freezer session. Your whole family will love it!
Chicken Scampi Recipe
3 pounds boneless skinless chicken breast halves
3 eggs — beaten
2 cups bread crumbs
1 cup butter
4 cloves garlic — crushed
juice of one lemon
Cut boneless chicken breasts into bite sized chunks approximately 1″ in size; dip into egg and roll in bread crumbs. Brown chicken pieces in butter and remove from pan. Saute’ garlic for 2-3 minutes, add lemon juice and return chicken pieces to the pan. When chicken is hot, and coated with garlic lemon sauce, serve over linguine or angel hair pasta. Garnish with Parmesan cheese and parsley if desired.
To freeze: Put entire contents of a COOLED pan (chicken and sauce) into a freezer bag. To serve, thaw sauce and chicken, make pasta as recommended and heat sauce and chicken on stove top on medium heat, stirring often for approximately 15 minutes. (you can microwave the sauce too).
