I really feel like such an idiot. How in the world have I been on the planet for 37 years and never ever discovered the beauty that is… spaghetti squash? And why in the world did I think it sounded so gross. It’s AH-MAY-ZING! (to quote my teens!) And what’s almost better than the spaghetti squash itself, is that my kids will eat it. And they LIKE it. Like it a lot! I was shocked, but oh, so overjoyed. I thought surely I’d have to lie to them or hide it in something to get them to eat it, but I didn’t. And they had seconds (and probably would have had thirds if I had made more!) If you’ve never tried a spaghetti squash like I hadn’t until recently, let me tell you what is so special about this awesome vegetable.
First, Spaghetti squash contains plenty of nutrients, including potassium, Vitamin A, folic acid and beta carotene. It is wonderfully low in calories. A single cup (1 cup/155 grams) serving is about 42 calories! It makes this veggie a dieters dream, and trust me I found that out first hand.
A Spaghetti Squash averages about 4 to 8 pounds and is available year round with peak season from early fall throughout the winter. The squash is cylinder shape, and the inside has seeds that look like pumpkin seeds, though generally less of them. The seeds can be prepared the same way as pumpkin seeds, if you choose. Typically, a true spaghetti squash is pale ivory to pale yellow in color. However, in the early 90’s, an orange spaghetti squash was developed which they call “Orangetti”, and it is higher in beta carotene. In addition, the orange spaghetti squash variety seems to be a bit sweeter than its paler counterpart. Both kinds of squash have a very mild flavor, almost tasteless, which is why serving it to kids and picky eaters is not that difficult. In fact, when you pair the spaghetti squash with a sauce, it will typically take on the flavor from that sauce and is simply divine.
The average four-pound spaghetti squash will yield about five cups! They are relatively inexpensive, making them the perfect veggie!
Our store had them on sale the other day, and I picked one up for .99! It’s like 5 meals worth! LOL Love it!
They store for about a month or so at room temperature, so it would be okay to stock up on a few when you see them on sale. They also apparently freeze well, though I have yet to try them (I don’t have to, we eat them too quickly!)
In the coming days ahead, I will be posting a few cool ways to eat them as a main course and as a side dish.
