To make our Chocolate & Marshmallow Cupcakes, you’ll need:

  • 1 cup of all-purpose flour
  • 1/2 cup of unsweetened cocoa powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1/2 cup of sugar
  • 1/2 cup of brown sugar
  • 1/2 cup of vegetable oil
  • 2 eggs
  • 1 teaspoon of vanilla extract

To make the marshmallow frosting, you’ll need:

  • 1/4 cup of butter, softened
  • 1 cup of marshmallow fluff
  • 1/4 cup of heavy cream
  • 1 teaspoon of vanilla extract
  • 3 cups of confectioners’ sugar

Directions:

1. Preheat the oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.

2. Sift together the flour, cocoa, baking soda, baking powder, and salt; set aside.

3. In a large bowl, beat together the sugar, brown sugar, and oil until well blended. Beat in the eggs one at a time, then stir in the vanilla. Gradually add the flour mixture to the wet ingredients, mixing just until combined.

4. Fill each muffin cup about two-thirds full with batter. Bake for 18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

5. To make the marshmallow frosting, beat together the butter, cream, and vanilla extract until smooth. Add the confectioners’ sugar gradually, beating well after each addition. Beat in enough milk to reach the desired consistency.
